Old-Fashioned Gingerbread with Lemon Glaze

A favorite, this recipe is intended for a Crock-pot Bread ‘n Cake Bake pan (3-1/2 or 5 quart Crock-pot).

Old-Fashioned Gingerbread Cake

  • 1/2 cup butter, salted
  • 1/2 cup sugar
  • 1 egg
  • 1 cup molasses (Peter Rabbit – unsulphured & full flavor)
  • 2-1/2 cups all-purpose flour
  • 1-1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon (Saigon cinnamon works great)
  • 2 teaspoons ground ginger
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup hot water

With electric mixer, cream butter and sugar.  Add egg, molasses and dry ingredients; blend well.  Add hot water and beat well.  Pour batter into greased and floured Bread ‘n Cake Bake pan and cover.  Bake covered in Crock-pot on High setting for 2-1/4 hours.  Do not check or remove cover until last 1/2 hour of baking.  Done when toothpick inserted into middle comes out clean.  Let stand 5 minutes.  Unmold on cake rack to cool for 15 minutes.  Make Lemon Glaze.  Move cake to cake stand.

Lemon Glaze

  • 1 cup powdered sugar
  • 1/4 cup lemon juice

Mix and pour Lemon Glaze onto warm cake.  Optional: zest lemon, about 1 teaspoon, adds a nice finishing touch.  Serve while warm, or let set several hours before covering with cake plate lid.  Enjoy 🙂
