Such an easy, flavorful and versatile recipe to make in under 15 minutes!
- 1 (12.5 ounce) can Chicken Breast; drained
- 3 celery ribs with leaves; rinsed and diced
- 3/4 cup dried cranberries
- 1 whole lemon* (or 1 tablespoon squeezed lemon juice)
- 1/2 cup heaping mayonnaise
Drain canned chicken breast.
In a large bowl, combine 3/4 cup dried cranberries with 2 tablespoon fresh lemon juice, or 1 tablespoon squeezed juice. Toss until cranberries are thoroughly coated with lemon juice. *For passionate cooking enthusiasts, using real lemon, zest lemon generously and stir into juice and cranberries.
Rinse, drain, and dice celery ribs and leaves. Add to cranberries and lemon juice; stir to combine.
Chop drained chicken breast and add to mixture; stir to combine. Add mayonnaise and stir; adding more as needed.
A quick dash of sea salt, and whatever appeals to YOU! I chose fresh ground black pepper this time. (Cumin or cinnamon, if you add chopped apples, OR Turmeric, if you add sliced almonds, are also excellent choices.)
Cover and chill for at least an hour and re-stir; add more mayonnaise if needed.

- 1/4 cup golden raisins; reduce cranberries to 1/2 cup
- 1/4 cup finely chopped sweet or red onion; reduce 3 celery ribs to 2
- 1/4 cup chopped walnuts or 2 tablespoons of slivered almonds
- 1 small red or green apple, chopped; reduce 3 celery ribs to 2
Great as is…or on crackers, or top your favorite salad.
Makes a flavorful sandwich on multi-grain bread, with several leaves of crunchy lettuce.
Or try on light-toasted, sour dough bread; lightly buttered.
For those of us that are adventurous, and like to eat passionately, licking lips and fingers, savoring all the different flavors and textures…add olive oil, or real butter, to skillet, medium-high heat, and lightly grill dark rye bread on one side. Add real blue cheese crumbles to the chicken salad mixture and assemble sandwich with the warm grilled side, inside against the salad mixture. Warm the outside of assembled sandwich in skillet in remaining olive oil, or butter; similar to a grilled cheese. Your bread will be lightly warm, a bit greasy and crunchy on the outside, with a cool, flavor packed filling on the inside.
